1. Sustainable Sourcing
Where possible we select the finest locally sourced, seasonal, and organic ingredients to ensure high quality products. By partnering with ethical suppliers who adhere to responsible farming, fishing, and fair-trade practices, we know that our products are supporting a positive supplychain. Avoiding ingredients that contribute to deforestation is essential, reducing habitat destruction or overfishing, ensuring traceability too.
2. Waste Reduction
We implement a zero-waste strategy with careful menu curation, precise portion control, and a responsible charity food donation program through FareShare Sussex and Surrey. Utilising ethical waste management methods minimises landfill contributions by up to 90%. We are working towards eliminating single-use plastics in favour of biodegradable, compostable, or reusable service ware.
3. Energy and Water Efficiency
We optimise operational workflows by reducing consumption with our kitchen equipment and car pooling with event vehicles. We employ innovative water conservation techniques in food preparation and source renewable energy to power our operations and reduce our carbon footprint in the form of solar panels.
